Move code that sets Person auditable fields to AuditableInterceptor

The AuditableInterceptor is the one responsible for setting auditable fields, there is still code in PersonSaveHandler that sets personDateCreated, personCreator, personChangedBy and personDateChanged, this logic needs to be moved to the AuditableInterceptor
